The Fidoro family has long cared about the health of the land- they have been farming organically in the Valdobiaddene for over 40 years, long before it was trendy. They were the first to certify organic in the sub-zone and are very focused on fostering biodiversity.
The wine is non-vintage, but the grapes are fresh, so this is mostly 2019, with disgorgement happening soon before making its way stateside.
Second fermentation happens in steel tank, charmat method, using concentraed grape must and native yeast.
