Five hectares of volcanic soil in the small medieval village of Vitorchiano at the foot of Mount Cimini in Central Italy's region of Lazio. The vineyards are part of the monastery.

With very little modern technology, very little intervention. Everything is done organically, tended to by happy hand, and there's a bit of skin contact to boot.

WHY

The Sisters have been farming organically and producing natural wine for awhile now as a means to support their lifestyle and the existence of their community. Wine has been made in this area for a very long time.
