100% Lambrusco

Lombardy, Italy. The winery, Corte Pagliare Verdieri, is located in the town of Sabbionete, a "model" town built by the noble Gonzaga family.

Hand-harvested in late September and fermented in steel tanks where it is kept until June then bottled unfiltered. The warm days prompt the start of a second fermentation in the bottle. The wine then rests one year in the bottle before release.

Pork, rich fish (Salmon, Tuna, etc.), mature and hard cheese and root vegetables.
