Venturini Baldini farms a 17th-century estate in the hills between Reggio Emilia and Parma — 135 hectares, only 30 of them vines, the rest left as wild woods and pasture. They were among the very first in Italy, and the first in the region, to certify organic, back in 1976. They make exceptional balsamic here, too.
