The grapes are harvested manually and in the cellar after the destemming-crushing the crushed grapes are placed in steel fermenters to macerate for 5 days in cold with the aim of extracting color and aromas. The must obtained is separated from the skins and placed in an autoclave for fermentation. Once an overpressure of 2.5 atmospheres is reached, the fermentation is stopped with the cold and bottling is carried out.
Suitable to accompany spicy dishes, spicy cold cuts, bitter chocolate desserts and red fruit salads.
