Gaupasa is an organic project in Beire, in Navarra, named for a Basque term that means to revel all night until dawn, which folks of all ages do in Basque villages during festival time. This is low-intervention wine made of native grapes. The skin-contact white gets its color, grip, and savory edge from time on the skins — fresh and mineral rather than heavy.
