Languedoc-Roussillon Chardonnay made from slower ripening grapes that benefit from a period of cold skin contact and maceration. Pressed and free-run juice from must — left on its lees for a bit, 20% in aged French barrel for 3 months.
A bright yellow gold hue and seductive scents of blossom and cinnamon spice. A remarkable mélange of pears, peach, honey toffee, cream and vanilla on the palate. Beautifully balanced with ripeness, acidity, length and real structure.
Montsablé is a project by Terre Fidèles that focuses on the cool climate terroir and varietals of Haute Vallée de l'Aude in Languedoc. With limestone soils, Atlantic influence, and altitude of the French Pyrénées, they've found the perfect place for Chardonnay and Pinot Noir with freshness and finesse.
Haute Vallée de l'Aude is located in the far south-westerly part of the Languedoc — at the root of the IGP's very distinctive identity through two critical factors: the oceanic influence rising off the Atlantic, and the nearby Pyrenees which lead to vines planted at high-elevation sites, sometimes over 500 metres above sea level, with grapes ripening fairly late.
Around 60% of Haute Vallée de l'Aude IGP wines are white — quite different to much of Languedoc-Roussillon. Records of viticulture in the region date back to the 10th century.
