Protector Cellars is Alex Katz's project, and he is going for something more ambitious than carbon neutral — he wants the winery to be climate positive, pulling more greenhouse gas out of the air than it puts in. All the fruit comes from certified sustainable vineyards. The can is the point: roughly half of a bottle's carbon footprint is the glass itself.
