Arugula-based amaro from the Cilento coast of Campania. Bittersweet and surprisingly approachable — caramel, vanilla, a little bubble gum, then a clean bitter finish. Sip it neat, over ice, or with soda.

Arugula isn't just for salads. See The Elephant makes their Amaro di Rucola from rucola grown along the Cilento coast of southern Campania — a sun-drenched stretch of UNESCO-protected coastline where the stuff grows nearly year-round. The recipe comes from a multigenerational Italian family with over 65 years of amaro production behind them.
The result is unlike most amari you'll come across. It leans bittersweet rather than medicinal — think caramel, vanilla, a hint of bubble gum on the nose, then a clean herbal finish that earns its place. Smooth enough to sip neat or over ice, but structured enough to hold up in a cocktail. Bartenders love it for a reason.
The name is a nod to an old American idiom from the 1800s — "see the elephant" meant going out into the world to witness something extraordinary firsthand. This one's worth seeking out.
